2 ¼ cups Sugar
1 Tbsp. Flour
½ lb. Butter
1 tsp. Vanilla or lemon extract
2 cups Buttermilk
¼ tsp. Salt
Beat eggs light.
Save 2 egg whites, beat until stiff or in peaks.
Add sugar gradually with flour.
Add buttermilk, butter, vanilla or lemon extract and salt.
Fold in egg whites.
Bake in unbaked shell, 10 minutes at 400°, then 325° for 25-30 minutes.
Test with silver knife until done.
