Old-Fashioned Mincemeat
For Thanksgiving and Christmas Pies
![]() 2 pounds beef
2 pounds currants
2 pounds raisins
1 pound citron
2 pounds beef suet
1 1/2 pounds candied lemon peel
4 pounds apples
2 pounds sultana raisins
2 pounds sugar
2 nutmegs, grated
1/4 ounce cloves
1/2 ounce cinnamon
1/4 ounce mace
1 teaspoon salt
2 lemons (juice and rind)
2 oranges (juice and rind)
Simmer the meat until tender, let get cold and chop it fine.
Peel, core and chop the apples and chop the suet fine.
Mix the dry ingredients, then add the juice and rind of the lemons and oranges.
Pack in a stone jar or large crock, cover close and keep in a cool place.
It will keep throuh the winter.

2 Qts. Green tomatoes
4 Qts. Apples
2 Qts. Cider
2 lb. Raisins
1 Qt. Suet of Butter
1 lb. Citron
½ cup Molasses
2 ½ lb. Brown sugar
2 Tbl. Cinnamon
1 Tbl. Cloves
2 Tbl. All Spice
½ Tbl. Nutmeg
1 tsp. Mace
1 tsp. Salt
1 tsp. Pepper
Grind apples, tomatoes and suet in food chopper, mix all thoroughly and cook slowly for three hours.
Will keep all winter in sealed jars.
